This Cabernet Franc with Olives and Bruschetta recipe makes an elegant appetizer or light meal.   • Total Time: 30 minutes

Instructions

  • Preheat the oven to 350° F.
  • (175 degrees C).
  • Set aside the olives with 2 tablespoons olive oil in a bowl.
  • Brush the remaining olive oil over the sliced baguette on a baking sheet.
  • Bake for 5-7 minutes, or until the baguette slices are crisp.
  • Heat the remaining olive oil in a large skillet over medium heat.
  • Sauté the garlic for 1-2 minutes, or until fragrant.
  • Bring the Cabernet Franc to a simmer.
  • Simmer for 8-10 minutes, or until the wine has reduced to half its original volume.
  • Stir in the olives to combine.
  • Season to taste with salt and black pepper.
  • Remove from the heat and set aside for 5 minutes to cool.
  • Pour the Cabernet Franc and olive mixture over the slices of bruschetta.
  • Serve garnished with chopped fresh basil.
