Merlot Paired with Pulled Pork and Mashed Potatoes Recipe

This dish combines tender pulled pork, creamy mashed potatoes, and a glass of Merlot wine. The spice rub on the pork adds just enough flavor to balance out the bold flavor of the wine.

  • Prep Time: 20 minutes
  • Cook Time: 5 hours
  • Total Time: 5 hours, 20 minutes

Instructions

  • Preheat the oven to 325°F.
  • In a small bowl, combine paprika, garlic powder, onion powder, thyme, salt, and black pepper.
  • All over the pork shoulder, rub the spice mixture.
  • Place the pork shoulder in a roasting pan and cover with chicken broth.
  • Wrap the roasting pan in foil and bake for 4-5 hours, or until the pork is tender and falling apart.
  • Peel and dice the potatoes and place them in a pot of boiling salted water while the pork cooks.
  • Cook for 20 minutes, or until the potatoes are tender.
  • Drain the potatoes and mash with milk, butter, salt, and pepper to taste.
  • Remove the pork from the oven and let it rest for 10 minutes before shredding it with two forks.
  • With mashed potatoes and a glass of Merlot wine, serve the pulled pork.
